Indoor hydroponic garden update from LunchLAB in Vancouver
Operated by Vancouver nonprofit Growing Chefs, LunchLAB is an innovative school meal program that serves students accessible, nourishing, culturally relevant lunches prepared by students with the mentorship of a team of chefs-in-residence. LunchLAB empowers youth to cook food for themselves and their peers providing opportunities for kids to find delight, dignity, and belonging in their interactions with food.
Currently, LunchLAB operates at five Vancouver-based schools. Below is an excerpt from their May 2026 newsletter.
Our wonderful partnership with Les Verts Living is the gift that keeps on growing. Their donated indoor hydroponic tower has officially moved to its new home at John Norquay Elementary, right after χpey̓ secured funding to buy their very own! Both indoor gardens are flourishing thanks to Chef Joy, Chef Chris, and our enthusiastic student chefs. Every single week, they plant and harvest crisp greens and fresh herbs.
“This just tastes soo much crisper and better than the grocery store!”
Student Chef
Students take immense pride in seeing their hyper-local produce go straight from the garden to the LunchLAB salad bars.
Students participating in LunchLAB are growing fresh produce in their Terrace Pro Indoor Garden. Visit our Indoor Gardening for Schools page to learn more about how to start an indoor hydroponic garden in your school or classroom.
